Rice is unarguably the most consumed food in Nigeria, ergo, there are many ways to prepare rice and coconut rice is one of them.
Coconut rice actually looks like jollof rice; the difference is in the taste and aroma. A lot of people cannot tell the difference between coconut rice and jollof until they taste the first spoon.
Ingredients:
Parboiled rice
Coconut milk
Chicken stock
Chilli pepper
Fried tomato stew
Salt and seasoning cubes
Onions
Thyme
Fried pieces of chicken or beef (to serve)
Preparation
1. Place a large pot on medium heat.
2. Pour in the chicken stock, tomato stew and coconut milk and allow to boil.
3. Add in the parboiled rice. Put pepper, salt and seasoning cubes to taste.
4. Allow to cook till the water is dried and rice is soft enough to taste.
5. Serve with your chicken or beef and enjoy
